French Canadian amnesty for micro-organisms

I'm back, with a post about cheese to prove it.

In the States, raw-milk cheese aged fewer than 60 days is illegal. To get around this while staying within the letter of the law, you could always obtain some raw milk (by going to the farm in person to buy it and/or by buying a share of a dairy cow, depending where you live) and then make your own. OR you could just buy fish bait instead.

Another solution: Head to Quebec, which just legalized the good stuff.
